If you’re looking for an easy, make-ahead dessert that’s sure to be a crowd-pleaser, this one is for you. It’s gluten-free, dairy-free, refined sugar-free, paleo, and vegan, which makes it perfect to serve guests with varying dietary requirements. Most importantly, it’s DELICIOUS!
1 cup 2die4 Live Foods Activated Almonds
1 cup desiccated coconut
2 fresh medjool dates
2 tbsp coconut oil
2 tbsp cacao powder
1/2 cup 2die4 Live Foods activated cashews, soaked overnight
1/4 cup coconut butter, melted
2 tbsp coconut oill, melted
1/4 cup coconut milk
1 cup raspberries
1-2 tbsp maple syrup (optional)
For the base, pulse the almonds and shredded coconut in a food processor until a fine crumb is achieved. Add in the dates, cacao, and coconut oil and pulse until combined.
Press the mixture into 4 tart tins and place in the fridge while you make the filling.
For the filling, place all ingredients in a high powdered blender and blend until smooth and creamy.
Spoon the filling into the tart bases and place in the fridge to chill until ready to serve. Store the tarts in the freezer if not serving within 24 hours (be sure to let them defrost and soften before serving).
