Quick and easy to make, these are an excellent pick-me-up for anytime of day. They're also a great way to get the kids eating a highly nutritious snack full of vitamins and minerals!
Ingredients
400g of organic dark chocolate (chopped) or 1 cup of organic chocolate buttons
½ cup of 2die4 organic activated pepitas (plus extra to garnish)
½ cup of organic desiccated coconut
½ cup of 2die4 activated organic sunflower seeds (plus extra to garnish)
½ cup of organic dried currants
sea salt flakes to garnish or add some to the mix if you like a salty sweet treat.
1 Tbsp of Maca powder or an adaptogenic powder of your choosing
Method
Place chocolate in a heatproof bowl set over a saucepan of gently simmering water (don’t let bowl touch water) and stir occasionally until melted. Add remaining ingredients except salt and stir to combine. Set aside for 2 minutes to set slightly, then stir again. The mixture should be textured and rough; add more coconut for a chunkier consistency if needed.
Place tablespoons of chocolate mixture on baking paper-lined trays and shape into cookie sized rounds with a spoon. Sprinkle over the sea salt and extra pumpkin and sunflower seeds to garnish, then chill until firm.
