Hummus Recipe

Hummus is a popular spread or dip that is loved the world over.  Getting the right balance of flavour and texture is key to making a really good one.  Thanks to Kirstie @themobilenutritionist for this recipe and the brilliant idea of how to make a toast snack into a protein-packed meal.

 

INGREDIENTS


400g of dried chickpeas (soaked overnight)
4 tbs aquafaba (the liquid from the chickpea soak)
1/2 cup tahini
1/3 cup olive oil
Zest and juice of 1 lemon
1 garlic clove, minced
 

METHOD

1. Add all ingredients to a blender and blend until smooth
2. Spread on your fave toast and top with crispy chickpeas (see recipe below)
3. your favourite spice and fresh herbs

CRISPY CHICKPEAS 

 

INGREDIENTS

400g of dried chickpeas (soaked overnight)
1 tbsp olive oil
3 tbsp your favourite herbs and spices

METHOD

1. Drain and rinse chickpeas in a colander and add to a bowl

2. Add olive oil and spices and mix until evenly combined

3. Cook on a lined baking tray for around 40 minutes, shaking tray after 20 mins so they can cook evenly.
