Creamy Activated Cashew Cheese

A dairy-free, clean eating, probiotic-rich spread perfect for sandwiches, crackers, or dipping!

Ingredients:

  • 1 cup 2die4 Activated Cashews
  • ¼ cup filtered water
  • 2 tbsp lemon juice
  • 1 tbsp apple cider vinegar
  • 1 tbsp nutritional yeast
  • 1 garlic clove (minced)
  • ½ tsp sea salt
  • ½ tsp organic onion powder
  • 1 tbsp olive oil (optional, for extra creaminess)
  • Herbs like chives, parsley, or thyme (optional)

Method:

  1. Place activated cashews, water, lemon juice, apple cider vinegar, nutritional yeast, garlic, salt, and onion powder in a blender or food processor.
  2. Blend until smooth and creamy, adding more water if needed for the desired consistency.
  3. Taste and adjust seasoning.
  4. Transfer to a bowl and stir in finely chopped fresh herbs if desired.
  5. Store in an airtight container in the fridge for up to 5 days.

 Spread on toast, use as a dip for veggies, or as a dairy-free alternative to cream cheese!
