This is a small batch recipe ... perfect for when you need a blondie (or 2) but don’t want to bake, or can’t be trusted with ( ? we’ve all been there), an entire batch of 12-24.
Crispy on the edges, super fudgy in the middle (just as a good brownie / blondie should be ) & choc full of choc chips ?
1 bowl + 20 mins! .
Here's how you do it;
Makes 4 large, 6 med or 9 bite size blondies
For the Blondie Batter:
?1 egg – or 1 flax egg or your fave egg replacer.
?1/2 cup macadamia butter (created with 2die4 Live Foods Organic Activated Macadamias)
?1/4 cup monk fruit sweetener (or sweetener of your choice)
?1 Tbsp organic coconut oil
?1 Tbsp maple syrup
?1 tsp vanilla
?1 Tbsp organic coconut flour
?1/2 tsp organic cinnamon powder
?1/2 tsp baking soda (this makes them a bit fluffy , if you want them extra fudgy , you can leave it out but note they won’t rise much at all)
?1/2 tsp flaky salt + extra for sprinkling
For the top layer
?Organic cacao nibs - measure with your ❤️
?1 Tbsp organic cacao powder
?1 tsp instant coffee (ground)
?1 tsp vanilla almond milk
✳️ Mix the Blondie ingredients together
✳️ Pour 3/4 of batter into 5x5 in baking dish or mini loaf pan
✳️ Mix cacao, espresso & almond milk into remaining batter
✳️ Dollop & swirl brownie mix on to blondie batter
✳️ Bake @ 175'C/350'F for 15-20 mins
✳️ Devour!
Best served with a scoop (or 2) of your fave ice cream ❤️
