Salad w Buckwheat & Pistachios

Serves 2

Ingredients

  • 1 cup of activated buckwheat
  • 1 cup of massaged kale
  • 1 avocado diced
  • 3 tablespoons chopped parsley
  • 1 chili finely sliced (optional depending on taste!)
  • 3 tablespoons chopped activated pistachios
  • 1 small head of broccoli florets lightly steamed
  • ½ cup edamame beans shelled

Tahini Dressing

  • 1 tablespoon tahini
  • ½ tablespoon lemon
  • 1 teaspoon nutritional yeast
  • 1 teaspoon tamari
  • 2-3 tablespoons water to thin

Method:

  1. Mix all the salad ingredients together in a large bowl.
  2. Mix all of the dressing ingredients together in a small mug or bowl until you reach a smooth and creamy consistency.
  3. Mix the dressing through the salad, season to taste and then split between two bowls.
  4. Top with extra lemon and activated pistachios.
