Ingredients
- 1 cup of activated buckwheat
- 1 cup of massaged kale
- 1 avocado diced
- 3 tablespoons chopped parsley
- 1 chili finely sliced (optional depending on taste!)
- 3 tablespoons chopped activated pistachios
- 1 small head of broccoli florets lightly steamed
- ½ cup edamame beans shelled
Tahini Dressing
- 1 tablespoon tahini
- ½ tablespoon lemon
- 1 teaspoon nutritional yeast
- 1 teaspoon tamari
- 2-3 tablespoons water to thin
Method:
- Mix all the salad ingredients together in a large bowl.
- Mix all of the dressing ingredients together in a small mug or bowl until you reach a smooth and creamy consistency.
- Mix the dressing through the salad, season to taste and then split between two bowls.
- Top with extra lemon and activated pistachios.
