Vegan taco! Packed with wholefood plant protein, healthy fats, fibre, ferments, greens, probiotics and prebiotics this is a feast for the senses and those all-important gut-bugs. Thank you @amy.clinkard

Mexican taco

 

INGREDIENTS

Base;
Choose one - wholefood gluten free wrap/cooked sweet potato/leafy greens

Toppings;
-1/2 avocado smashed with lime juice & chopped coriander
-1 heaped tbsp cashew cheese
-2 heaped tbsp black beans (pre-soaked & cooked)
-1 heaped tbsp sprouted mung beans
-2 tbsp kimchi
-handful rocket
-4-5 2die4 Live Foods Activated Walnuts
-3 tbsp unsweetened coconut yoghurt mixed with 1 tsp smoked paprika
-drizzle extra virgin olive oil
-sprinkle sea salt & black pepper
